वेगन मॅंगो मूस (Vegan Mango Mousse)

साधारण ७-८ वर्षापूर्वीची गोष्ट असेल एका मैत्रीणीकडे मॅंगो मूस खाल्ले आणि रेसीपी घेउन, सामान आणुन लगेच करून पाहीले. त्यादिवशी माझी एक मैत्रीण घरी आली होती तिला पण चाखायला दिले. ही माझी मैत्रीण नविन कोणत्याही शाकाहरी पदार्थाची कमीतकमी चव घेण्यासाठी तरी नेहेमी तयार असते. पण तिने ते खाल्ले नाही कारण त्यात जिलेटिन घातले होते. तेव्हा मला प्रथम समजले की जिलेटीन प्राणीजन्य पदार्थ आहे ते. त्यानंतर माझा वेगन जिलेटीन चा शोध सुरु झाला आणि अगार अगार पावडर मिळाली तेअगार अगार पावडर थाई, इंडोनेशियन, व्हीएटनामीज पदार्थांमधे जेलींग एजंट म्हणुन वापरतात. ते सी-वीड पासून बनवलेले असते. पुढे मी प्राणीजन्य पदार्थ खाण्याचे थांबवले तेव्हा क्रीमचीज, कूलव्हीप, व्हिपिंगक्रीम ऐवजी सिल्कन टोफु वापरायला सुरुवात केली. ही रेसीपी माझ्या टोफू न आवडणा-या मैत्रीणी पण आवडीने खातात.

Vegan Mango Mousse

२-३ आंब्याच्या फोडी
१/२ पॅक सिल्कन सॉफ्ट टोफ़ु (साधारण ५-६ औंस)
३-४ टेबल्स्पून साखर
१/२ टीस्पून वेलची पावडर
३-४ केशर काड्या
१ संत्र्याचा रस
१/२ लिंबाचा रस

१/२ कप पाणी
३ टेबल्स्पून अगार अगार फ्लेक्स

कृती - आंब्याचा रस साधारण २ कप होईल इतके आंबे घ्यावेत.
एका लहान पातेल्यात पाणी तापयला ठेवावे. तोपर्यन्त आंब्याच्या फोडी, साखर, टोफ़ु, वेलची पावडर, केशर, संत्र्याचा रस, लिंबाचा रस एका मिक्सरच्या भांड्यात घालून नीट बारीक करून घ्यावे. पाणी उकळले की त्यात अगार अगार फ्लेक्स घालून नीट हलवून गुठळ्या काढाव्यात. त्याला एक उकळी आली की ते गरम मिश्रण मिक्सरच्या भांड्यात (आंब्याच्या मिस्र्ह्रणात) ओतावे. हे पूर्ण मिश्रण आता साधारण २-३ मिनीटे मिक्सरमधून फिरवावे. ज्या भांड्यात हे सेट करायला ठेवायचे असेल त्या भांड्यात ओतावे. ते भांडे साधारणपणे ८-१० तास सेट होण्यासाठी फ्रीजमधे ठेवावे. (फ्रिझरमधे ठेवु नये). वाढतेवेळी पाण्यात बुडवलेली सुरी मूसच्या कडेने फिरवून ताटात उलटे टाकावे. मूस केकप्रामाणे नीट कापता येतो. सर्व्ह करताना एखादी आंब्याची फोड सोबत ठेवावी.

टीप - १. मुळ कृतीमधे क्रीमचीज किंवा कूल व्हीप किंवा व्हीपिंग क्रीम आहे. मी ते खात नसल्याने ती consistency येण्यासाठी मी टोफु वापरला आहे.
२. ताजा आंबा मिळत नसेल तेव्हा २ कप कॅनमधला पल्प वापरायला हरकत नाही.

  1. Looks delicious. I make a similar mousse using raspberries. Though I don't add the agar-agar powder, I'm sure it will make the mousse firmer. Will try adding it next time.

  3. TheCooker - I like mousse little firm so I like to add the Agar agar. try next time see if you like it.

    Priya - I will say this has far fewer calories than traditional cakes/pastries as this has mostly fruit sugar. Added sugar is very less. This has tofu which adds protein content and this makes about 8-9 servings. Try it and see if you like it.

  7. anonymous, did you use Agar flakes or powder. With Agar powder it might have gotten too thick. I don't have Agar Powder and water proportions with me.

  9. Proprtions for Agar powder are different than agar flakes. For given proportion of Mango pulp and Tofu, you would need only 3 tsp not 3 tbsp of Agar powder.
