फोटोफिचर - खानदेशी वांग्याचे भरीत

आमची देशात जायची वेळ झाली की दोन्ही घरांमधे(माहेरी आणि सासरी) आमच्या येण्याची जंगी तयारी सुरू होते. कमीत कमी दिवसात जास्तीत जास्त पदार्थ कसे खाऊ घालता येतील असा प्लॅन केला जातो. त्यात पुरणपोळी, गुळपोळी, करंज्या, चिरोटे असले गोडाचे पदार्थ तसेच डाळ-बट्ट्या, फुनके/वाफोले-कढी, भरित, कळ्ण्याची भाकरी, गव्हाचा चिक, ज्वारीची दिंडे असे बरेच तिखट पदार्थ लिस्ट मधे असतात. त्याचबरोबर मी कोणासाठी काय काय करून घालायचे याचीही लिस्ट घरी तयार असते.
२-३ वर्षांपासून सासूबाईंना संधिवात झाला आहे त्यामुळे धाकटी जाऊ सगळे करते. पण काही काही पदार्थांमधे मात्र त्यांचाच हात लागतो त्यापैकी महत्वाचा पदार्थ म्हणजे वांग्याचे भरीत. खानदेशी लोकांना त्यांची वांगी, वांग्याची भाजी आणि सगळ्यात महत्वाचे म्हणजे त्यांचे भरीत अतिशय प्रिय असते. अस्सल खानदेशी माणूस गॅसवर भाजलेल्या वांग्याचे भरीत, तुरकाट्यांवर भाजलेल्या वांग्याचे भरीत आणि गोवर्‍या-लाकडावर भाजलेले भरीत यांच्या वेगवेगळ्या चवी व्यवस्थीत ओळखू शकतो. प्रत्येक घरची करण्याची पद्धत थोडाफार फरक सोडला तर जवळजवळ सारखीच. दुपारच्या जेवणानंतर दोन लोक भेटले की काय खाल्ले याच्या चौकशीमधे भरीत खाल्लेला एखादा तरी निघतोच!!!!


आता पाहू हे भरीत फोटोफिचरमधून -

मिरच्या, लसूण, वांगी, बडगी, मुसळी (ठेचणी) सगळे आणले का?


विटांची चूल मांडून विस्तव चांगला धगधगतोय. त्यावर जाळी ठेवून वांगी भाजायची आहेत.


अबबब!! येवाढ्या मिरच्या?
हो हो लागतील येवढ्या! या कमीच पडतील. थोड्या घालू लागल्यातर अजुन!


वांगी काटे काढून धुवुन तयार आहेत.
पुरतील ना येवढी वांगी. का घेऊ एखादे अजून?
नाही ठीक आहे. चटणी असेल सोबत येवढी पुरतील.


विस्तव चांगला पेटलाय आता ठेव वांगी नीट त्या जाळीवर. देठ बाहेरच्या बाजुला असूदेत म्हणजे फिरवायला बरी पडतील.


कोथिंबीरीची जुडी, (कांद्याच्या)पातीची जुडी कुठाय?
चिरून खाली ठेवलीय.
खोबरं चिरुन ठेवले का?
हो हो काप तयार आहेत वाटीभर! शेंगदाणे पण बाजुला काढून ठेवलेत एक वाटी.

हे झालेले वांगे सोलते मी बघते नीट झालेय का ते.



तोवर मी मिरच्या टाकते भाजायला.


मिरच्या झाल्या पण भाजून? बर टाका बडगीत, मी ठेचा करायला सुरुवात करते.


वांगी नीट सोला ग. तेल वाया नका घालवू. त्या तेलानं चव येते चांगली. वरचे देठ मीठ घालून पोरांना चघळायला ठेवा.
चघळायला??!!??
हो लॉलिपॉप सारखं चघळतात पोरं!!


सोलून होतील तशी तशी घाला बडगीत.
नीट ठेच ग बाई. अगदी चिकण होऊदेत!


झाली बाई वांगी! आता बिबडे भाजुन घेऊ. विस्तवावर होतील घमेलीभर भाजून!
घमेलीभर होतील तेव्हा होतील. एकेक तर घ्या भाजून खायला आत्ता!


हा हे कसं नीट बारीक झालं! आता गॅसवर परतलं की झालं!

अरे बिबडे कुठे आहेत?

    बिबडे म्हणजे ज्वारीचे पापड. ज्वारी भिजवून, वाटून, त्यात गव्हाचा चिक घालून त्याचे पापड करतात. अप्रतीम लागतात अगदी. जळगावकडे कधी गेलास तर नक्की आण.

  4. Mints, I must be a Khandeshi at heart because I do love my eggplants. :) And I think I would certainly appreciate the different mediums for roasting them and the different flavors they create.
    This visual post is a gastronomic delight. I am drooling-- literally!-- as I write this. :) And reading about how your family works hard to stuff you with great foods during your stay brought a smile to my face because I can relate to it.

    mala Bharit -Puri chya partichi athvan aali he sagle photo baghun... I so miss it in US..

  9. How did you peel off charred brinjal skin? there is picture of peeled brinjals sitting in the pan of oil. Do i have to oil roasted brinjal before peeling the skin? what do you do with the oil once brinjals are peeled. Do you have to baste brinjals with grease (cooking oil/butter) while roasting?
    what do you do after you've pounded the mixture of roasted brinjals and chillies with garlic in bud'ga?
    Where can I buy bud'ga like the one shown in picture?

    You just remove the skin after letting them sit for 10 minutes or so. The oil you see is actually from the eggplants and not the eternally added oil. We use that oil or juice from the brinjals in the final dish and not throw away
