आमसुलाची कढी (Aamsool Kadhi)

मला आमसुलचे जवळपास सगळेच प्रकार आवडतात - सोलकढी, फुटी कढी, ताज्या कोकमाचे सार, कोकम सरबत, आमसुलाची कढी, चटणी. माझे एक मामा कोयनानगरला रहातात त्यामुळे उन्हाळा सुरु झाला की त्यांच्याकडुन ओली कोकमे, कच्चे फणस, आळुची फळे, जांभळे असले सगळे प्रकार नेहेमी घरी येत. मग मम्मी बरेचदा त्यांना जास्तीची कोकमे विकत आणायला सांगत असे. मग ती फोडुन बिया बाजुला काढुन सालांना मीठ, साखर लावुन बरणीत ठेवायची. बियांना खुप रस असतो तो काढायचा आणि तो रस देखील त्या बरणीत ठेवायचा. ती बरणी रोज उन्हात ठेवायची. ते घरी केलेले सरबत अप्रतीम लागते. आता मामा थकले त्यमुळे मम्मीला विकतच्या कोकम सरबताशिवाय पर्याय नाही. ही कोकमे घरी आली की बरेच प्रकार व्हायचे भाताची पेज घालुन केलेले कोकमाचे सार. ताजे सरबत, ताजी कोकमे घातलेली तुरडाळीची आमटी वगैरे. पण खानदेशात आमसुलाची कढी म्हणुन एक प्रकार दाल-बट्ट्यांबरोबर करतात. मला त्या दाल-बट्ट्यांपेक्षा त्या कढीचेच आकर्षण जास्त! ही रेसीपी माझ्या जावेची. तिची थोडी तिखट/गोड चवीची असते. माझ्याकडच्या सामानानुसार मी अगदी थोडा बदल केला आहे.
Aamasool Kadhi
५-६ आमसुले
२-३ टेबलस्पून बेसन
एका मोठ्या लिंबाएवढा गूळ
१/२ टीस्पून गरम मसाला/गोडा मसाला
लाल मिरची पावडर, मीठ - चवीप्रमाणे
२-३ टेबलस्पून चिरलेली कोथिंबीर
३ कप पाणी
फोडणीसाठी १ टेबल्स्पून ते, जिरे, मोहरी, हळद, हिंग, कढीपत्ता

कृती - १ कप पाणी गरम करुन त्या आमसुले घालुन ३० मिनीटे भिजत ठेवावीत. अर्ध्या तासाने पाण्यात ती सोले नीट कुस्करावीत. पाण्यातुन सोले बाजुला काढु नयेत तशीत त्यात ठेवावीत. त्यात बेसन, लाल तिखट, थोडी कोथिंबीर, मीठ, गुळ, मसाला घालुन नीट मिसळून घ्यावे. बेसनाच्या गुठळ्या राहु देउ नयेत. राहीलेले २ कप पाणी त्यात घालावे आणि नीट मिसळावे. एका पातेल्यात तेलाची जिरे, मोहरी, हिंग, कढीपत्ता, हळद घालुन फोडणी करावी.त्यात वरील कोकम-बेसनाचे पाणी घालावे. बारीक गॅसवर नीट उकळावे. उकळी येताना हलवत रहावे. एखादेवेळी उतु जाण्याचा संभव असतो. नीट उकळी आली की खाली उतरवावे. बारीक चिरलेली कोथिंबीर वरुन घालावी. ही आंबट/गोड कढी भाताबरोबर अप्रतीम लागते.

टीप - १. बेसनाचे प्रमाण कढी किती घट्ट किंवा पातळ हवी त्यावर २ किंवा ३ चमचे वापरावे.
२. दाल-बट्ट्या, वांग्याची भाजी, आमसुलाची कढी, भात असा बेत जेवणाला खास खनदेशी बेत असतो.

    By the way, I love aamsool kadhi too, but haven't had it in a while. Yours looks delicious. Will remember to pick up some amsool on my next visit to the Indian grocery store.

    Priya - Daal BaTTya ase eka vakyat sangata yenare prakaran nahi! thodafar Rajasthani daal-baaTi sarakha prakar asato.

    Aparna - Amsool is dried cover of Kokum (usually has salt on it) and you will get plenty of these in Goa and if you get hold of 'AagaL' you can use that 1 tsp per dried kokum rind.

  9. I got a little confused. Is kokum also known as aamsool? I tried solkadhi but it turned out sour! I love the flavour and look of sol kadhi! Will try this one - husband will be surprised:)

  10. Yes, dried kokum is known as aamsool in Maharashtra. Solkadhi is bit sour but the coconut milk takes away lot of sourness.

    I've just managed to procure some kokum fruit from Kokan.
    Can you please tell me how can I make the Agaal and preserve it, so that I can have sarbat, kadhi etc whenever wanted....

    1. Hi Shyama, I could not find the agal recipe. But recently Saee has written about kokum sarbat recipe. You can make that with fresh kokum fruits. Here Saee's recipe - http://www.myjhola.in/2012/06/kokum-juice-concentrate.html
